The Backwoods Whole Hog Unit can have options added for an extra price such as thermostatically controlled gas burners, which will take over after charcoal and wood drops below set point. Other options are an automatic water filler to maintain a constant water level and a convection system to maintain a even temperature from top to bottom in the cooking chamber. All our units are available in Stainless Steel. The Whole Hog Unit comes with two (2) shelves that are 27" by 59" in size, with one shelf being a carousel. The Whole Hog cooker holds 575 pounds of Boston Butts or Briskets (using the optional additional racks). This unit cooks between 225 to 250 degrees on approximately twenty (20) pounds of charcoal and wood for flavoring. The unit will maintain this heat for seven 7-8 hours. For larger pieces of meat, charcoal and water will need to be added.
