Convection Option

Has anyone had experience with the convection option on a BWS? How does it work and what sort of result/value have you seen? Is it worth the expense?

Imo, if you plan to run mostly full loads on the cooker or always cooking a big amount of product, that the convection fan would be a good value. It does keep the top to bottom heat range much closer to your set point than running without the fan.

I have had it on all my units for catering and as Old Dave said if you are loading it up all the time leaving air space is not as much a big deal as when you have it.
