Backwoods standard party

Postby firepitt36 » Sun May 13, 2012 7:06 am

Has anyone loaded the party down with briskets. I purchased a party and was wondering how many briskets was cooked on it at one time. I know it depends on sizes but just wanted an idea number. Thanks for any info.

I don't have a party, but Old Dave may chime in. I can do three briskets in my Chubby at a time, one per shelf. I arrange the shelves so there is at least 1" of clearance between the top of the brisket and the next shelf above it for good smoke circulation.

How big are those briskets, you put in there. Haven't quite figured how to put one 15 pound packer in my Chubby without chopping it up. Love to see a picture of it. :?:

I often cook big briskets on several types of cookers and many times they are larger than the grid I have to cook on. As I know, that any brisket will shrink a bunch with the cook, I set them up like this picture.

A simple beer can under the meat will work great and shorten up any brisket by about 30%. Later in the cook, the can can be removed or I usually just leave it in place until I wrap the meat. Have done this for years in my Backwoods Party.

I don't do briskets that are that big! This is one coming out of the Chubby. It covered most of the rack when I started it.

Thanks, fellas. I get CAB 7 to 8 pound flats, occasionally, and fast cook them (275) on the UDS (Neely's way, Old Dave.), and get great kudos on them. Hard to find CAB packers, around here. Promise to do the next one on the Chubby. Did a chuck roast on the CB500X last week, and boy, did it get gobbled up pronto. Love that CB, Dave!! :D

Great looking brisket, Rick. Was that with water pan, under 250 degrees or hot and fast with Old Dave's crinkle technique? :?:

That was low and slow with the water pan and no foil.
