Extened Party that is. That is at the top of my wish list. I currently have a Meadowcreek 120 and really do like it but I can not make it through the night like I use too. My plan is to sell it when I ever make myself do it and put the proceeds towards an expanded party. I have been reading about the various Backwoods Smokers and this seems like the right pick. I like the size weight and configuration. I was thinking about the fatboy/gator for the longest time. They may be too heavy for me now as I am not as young as I use to be to move around the yard or at a Comp. I also do not bend too well so the height of the party may be a good thing for me. Options I like are- heat diverter, 3 sliders, comercial fire grate, cover, permanent stand and possibly stailes doors that open 180 degrees, and tie down handels. I like to do competitons- Team- Back Porch BBQ. I have a Large BGE that I really like. In fact I just finished a 12-13 lb packer that I wet aged for 49 days. I am finishing the burnt ends now and will be putting on 2 corn beefs that I soaked in water for 2 days to make pastrami. Glad to be part of the forum. Hope to learn a lot. :D

Welcome to the forum. Search is your friend here. As a primer read all of "Old Dave's" posts.

How did the wet aged packer turn out? Did you have to trim any meat off of when you unpacked it? I thinking about trying the wet aging to improve my briskets, but they are pretty good now. :D

The Brisket was a little salty- probably to much rub. It was the best I have cooked as far a tenderness, Bent in half when I layed it over my finger. I did not have to trim- bought this from a butcher and he did a beautiful job. I think the wet ageing was definately worth it. Will do it again. Dont know if I will wait 50 days although that is what Dr. BBQ recommended. You just have to buy the brisket knowing what the cyrovac date was. I knew mine as my butcher wrapped it for me. Thanks for the welcome I read a lot of Old Dave's post prior to joining
