temp question

1-should fire be lit on same side as guru? 2-referencing competeter we want to start our cook at 350 for 2.5 hours then 300 for 3.5 hours how do we tame this fire back, beings we had a hot fire........remove hot coals? were using guru ...but time is an issue for turn in. we have a party also......would it be better to start in the party at 350 then move to competeter at 300 dennis

I would think that you would fire it on the same side as the guru. If you are using the guru you should be able to set the temp down and the guru will shut off the blower and you could close the damper on the guru to speed it up by limiting the air that it could draw.
