hot n fast cook

had a hard time gettin over 310 temp tried getting to 350 could not reach we were gonna cook at 350 for 2.5 hours got up to 310 so did 3.50 hours then put in pan foiled untll internal temp at 190 not much smoke ring quest. 1 getting higher temps quest 2 getting a nice dark smoke ring note we were doing butts and briskets using guru lump char. lighting fire oppsite side of guru thanks no caps this time

Were you running with water in the pan? I don't know much about the Backwoods smokers yet, I won't get mine until this next week. It would seem that if you were using water it would tend to keep the temps down and not let you achieve the extra high temps. I have seen posts on Old Daves blog where he has had his up to 400 and more, but he doesn't qualify whether that is with water or not.

I always light my charcoal on the same side as the guru. I don't know it that would make a difference or not.
