I thought I already posted this but I must have clicked the wrong button. I was set to get a standard Party with stainless steel doors when a dealer pointed out that I could get much more cooking space with the Extended Party - with standard doors - for about the same price. I believe one of the benefits is that you can cook spare ribs without having to angle them across the grate since the Extended is 3.5 inches deeper. I ordered a stand/hitch adapter from a gentleman in East Texas which will allow me to carry the Party on the back on my motor home when I participate in cook offs in Texas. I have been using a Big Steel Keg (aka Bubba Keg) with a hitch mount and a 18 inch WSM but have decided the BSK is just not what I need for multiple meat competition cooking.
Anyhow, the Party is seasoned and ready for my first brisket test cook this weekend. I have been reading this forum religiously since I ordered the Party and am ready to try out some of the techniques described and am especially interested in trying waterless cooking to simplify my cooking process.
